I think asking how long a piece of string is would of been easier.

I will put forward my tuppence worth and we you can go from there. As a new user to Linux I would of installed xubuntu simply as it give you a graphical interface rather than the command line that the server gives you (xubuntu is a light weight GUI compared to ubuntu). Some might argue that it a security risk or the gui takes away vital server resources but as you are only looking at a small occasional user base it should not be to much of a problem.

A useful program I install on my linux box is mc (midnight commander), this is a very simple text based user interface (sort of early gui). I find editing files a lot easier than trying to remember key combination for test editor like vi.

If you are going to be playing with web servers then you will need to install LAMP (Linux-Apache-MySQL-PHP)

Linux=Ubuntu
Apache=web server
MySQL= Database
PHP=Scripting (programming) language used on web servers

Never having played with email servers I will leave that to somebody else.
