I am surprised that you are encountering any problems of that sort with these standard services, hence the request for more information to try and troubleshoot the issue.

If you have a another fairly beefy machine that you can install something like VirtualBox on, it might be worth creating a virtual instance of Ubuntu Server that you can experiment with, to save you the bother of reinstalling when you hit issues.

The handy thing with this is that you can take snapshots before you attempt anything risky and quickly revert to a known good place if needs be.
