Assuming you have a decent processor, I don't think garbage collection is causing your long pauses. To verify this, try pressing the trash button in the lower right hand side, and see how long it takes.
More likely you are seeing synchronization delays due to mapped drives. Are your source files on a network drive, or local? If its network, consider ways to make it local.
