The nice thing about knobs is that over time you develop "muscle memory" where each one is and how to adjust it. You can make the adjustments without thinking about it, so you can keep your mind focused on operating.
A touch screen might be handy for some things, but the prime operating controls should be knobs IM (not so) HO. :=)
