The breakout box with RCA Phono jacks is a good approach and used by many. I prefer to use VGA Y-Adapter cables to combine whichever single-function cables I need for a given setup. I either make or buy the single-function cables, e.g., FSK/PTT, KRC2, Top-Ten Decoder, etc. As K6KR noted, many of the VGA Y-Adapters and other VGA cables have missing connections or shorted connections that work fine in the intended VGA applications. So, you have to carefully check the continuity of VGA adapters/cables for the K3 ACC application. I've been through a lot of VGA Y-Adapters and only found one source with all the connections made properly.
