 From my pool of experience from many customers machines as well as my 
own, let me recommend and sing the praise of the following Mac OS 
versions, that have served me well with no more than one crash a week 
with 24/7 uptime (except for Powerbooks that have more sporadic uptime). 
Naturally, this was after I updated the applications in use to compatible 
versions (a lot of Macfixit and user group reading).

I recommend these Mac OS versions:

7.6.1 for Macs with less than 20 MB RAM
8.1 for Macs with little RAM (less than 20-32 MB), including 68k Macs
8.6 for Macs with less than 128 MB RAM
9.1 and 9.2.2 for Macs with more than 128 MB RAM.
9.2.2 *only*, for use with OS X 10.x
X 10.2.1 for G3/G4 Macs with more than 384 MB RAM (192-256 *may* be 
acceptable for lightweight use).
OS 9 speed is usually the same on the same machine, provided you have 
sufficient RAM. OS X speed seem to be affected by many parameters, RAM 
seemingly the most important.

Really old machines with less than 12 MB isn't part of my recommendation 
as I think I'v forgotten now how they worked for me....
