BBEdit should do fine to open and save them. (Since your directions said to use WordPad, just be sure to tell BBEdit to save them with DOS delimiters... depending on how you have your BBEdit prefs set, that should be a one time thing to tell BBEdit, and then each time you continue to save the same file, it should retain the DOS delimiters). iCab may however have a problem displaying XML. I don't know as I haven't tried. But I know iCab is not on the cutting edge of functionality, and has some problems properly displaying some HTML (in particular CSS pages), so I wouldn't be overly surprised it if didn't display XML correctly. You might want to check www.versiontracker.com for an XML editor.
