Duh! Dope slap administered! No, I didn't think to look in the header of 
the email message... I just went to the preferences and made the change 
there. Many thanks.

Addenda: Just reconfigured the post, and discovered that =some= 
"encoding" appears to be required for messages to the 'Net with an 
attachment... so I opted for AppleDouble rather than letting it default 
to "Service Default".
