Yeah, if you leave the window open that shows the Temp Incoming folder, OS X will add another .DS_Store file to the Temp Incoming folder as soon as Emailer creates it. So the only way to really be sure OS X doesn't do that, is to close the open windows BEFORE starting Emailer (and even then, OS X may still add another .DS_Store file...
