Check out Window Shade X at http://www.unsanity.com/haxies/wsx/ That should restore what you want to do in OS X. There may be other utilities that restore window shading to OS X... don't know, I don't use it (I just double click the title bar and let it shrink down to the task bar... eventually I'll remember expose and start using it enough to get used to it...
