Ian, Other than building a 50 ohm parallel wire transmission line and measuring the voltage standing waves , I can't see a solution to making the measurements with what you have.
However, I think that most people who calculate uncertainty budgets will look up the VSWR of the items of test equipment in the manuals. I expect that you will find the input VSWR of the receiver in the manual. We get the VSWR of the antenna by consulting the calibration certificate. If you wanted to post the details of the antennas you have, somebody may be able to supply figures. The mismatch between 50ohm cables is usually ingnored as negligable, so all you need is receiver and antenna VSWR.
