I'll let more experienced people weigh in on your servo question, but I 
wouldn't hesitate to convert such a machine, maybe with a little tech 
support here, or directly from the manufacturer of the interface 
electronics.

I never use a mouse with LinuxCNC.  I buy a $25 Logitech K400 wireless 
keyboard.  The keyboard is slightly smaller than a standard keyboard, 
which is fine.  You won't be writing a novel on your CNC machine.  The 
keyboard has a touch pad in lieu of the mouse, which I use occasionally, 
but almost never while using LinuxCNC.  All you really need are the 
keyboard hot keys for most CNC operations.  The K400 keyboard serves as 
a large wireless pendant, allowing me to get close to the machine so I 
can see well, or use a feeler gage when touching off during a setup, and 
I can use the keyboard without looking to jog each axis where it needs 
to go.

There are silicone keyboard covers that do a good job of keeping shop 
grunge out of the keyboard, but the keyboards are so inexpensive that 
they could be considered disposable.
