Short answer: No; use the Advanced Find to do this.

Longer answer: The quick filter thing works only on what is shown in the
folder listing. If the E-mail address is given without a display name, then
it shows in the from field and can be searched on. You need to use Advanced
Find to search the entire address field. The quick filter could not be
changed to do with without a total and complex rewrite of how it works.
