When the ordering matters - i.e. when you are adding a second or third
category and not a first category, and not removing a category - then you
should not take the shortcut of clicking on the Category column to do your
adding. That's what it is - a shortcut for convenience. When precision
matters, you should go to Edit/Categories/Assign Categories, or
control-click (right-click if you have a two-button mouse) and choose
Categories/Assign Categories, or simply press the keyboard shortcut
command-, [command-comma], to bring up the Assign Categories window. That
lets you add as many categories as you like and then specify WHICH is to be
primary by selecting it then clicking the Set Primary button at the bottom.

New versions of software which increase functionality sometimes involve
learning new routines. Just learn command-comma Why should MS get rid of
greatly-increased functionality just because you're stuck in your old ways,
just for you. The new method allows much more flexibility. The software is
only a couple years old anyway. Just forget that they once had a less-good
method in 2001, and learn the new way.

What do you mean "Sort by Color"? How do you sort colors? Red at the top,
Blue at the bottom? RGB values? I don't think that many people other than
graphic artists, maybe, will know what the correct order is for colors. If
you mean color-by-name, are you perhaps not aware that you can set up to 281
trillion (2.81 ^14) colors by clicking "Other" in the color well for each
category. Many people set their own colors this way - these colors don't
have names.
