The only single-modifiers which are available are control-x, not use much by the built-in menus. Whenever there's a conflict, the result is unpredictable (as the Help says somewhere). I admit what you're seeing is rather freaky (probably the script gets selected, the character � intervenes for a moment, and when it reverts to the script it registers the option key as the code for opening the script. Or something.)
