You shouldn't assign any script's keyboard shortcut to option-x, shift-x or
option-shift-x, since those combinations all type characters. Option-s types
�. There's bound to be a conflict. The only single-modifiers which are
available are control-x, not use much by the built-in menus. Otherwise you
should always use option and shift in combination with command or control or
both.

Whenever there's a conflict, the result is unpredictable (as the Help says
somewhere). I admit what you're seeing is rather freaky (probably the script
gets selected, the character � intervenes for a moment, and when it reverts
to the script it registers the option key as the code for opening the
script. Or something.) Avoid option-S and other conflicts.
