The most full-featured such script is the shareware script "Friendlier
Claris It", which you can find on macscripter.net. In addition to removing
attachments it also will file incoming messages in various preassigned
folders (or create them on the fly).

I have a variant I based on that script's predecessor, which JUST does what
you want, removes and logs attached files. I named it
" !MySaveAttachments\mo9", using the " !" to make it sort to the top of the
script menu. You can find it here:

The suffix "\mo9" to the name  gives it a shortcut of Cmd-Option-9. You can
