As others have explained, excluding everything from the signature down has
been standard for eons. If you have quoting of replies enabled (">" prefix),
that usually encapsulates the signature as well, and therefore you will get
multiple levels. But leave one line with "-- " on it, with no preceding ">",
and everything from there on down disappears when you reply. This is why it
sometimes is a bad idea to put your signature at the top before other quoted
material; you are guaranteeing that the quoted stuff will be dropped when
people reply to you. If you want everything included, the sig must always be
the last thing in the message.
