The answer for us so far has been to disable the send/receive schedules.

Here is what I got from MS tech support

Inbox, Deleted Items, Sent Items needs to be 300-400 emails combined.  No
more.

Leave the option to remember the password in the keychain checked.

Try turning off the send/receive schedules as that cuases indexing above and
beyond the minute check when using exchange.

SP2 supposedly fixes a ton of sync issues.

The answer seems to be that when doing a great deal of syncing and there are
a ton of emails in those folders, Entourage starts to get sluggish in it's
response to the exchange server and causes the server to drop the
connection.
