Dan, Welcome to the club... A few months back I posted regarding the same delayafter much discussion, it seems to be a function of adding Entourage files to those able to be searched by Spotlight. It seems it¹s scanning the incoming files to add those to Spotlight¹s index for access in searches. That¹s the only thing that seems reasonable. You can turn that off on the last panel of Preferences and see if that affects your situation.
That said, the problem went away for a while, but now seem to be back for meand I have no easy answer. It could be due to a Security Update, or repairing permissions...I¹ve done no updates or rebuilds to Entourage in the meantime.
