Scott, you are absolutely correct. I just did a test as you described, and
moved all 414 items in that folder to a folder called old_prefs on my
Desktop. My Finder locked up almost immediately; I force quit it, and when
it restarted, all my icons were default size (rather than the tiny size I
use). So, I knew that it was already seeing some prefs missing! <g> I logged
out and back in to a bare, default desktop, navigated to my Applications >
Office > Entourage, fired it up, and had shift hs!

So, it's a question of one of those 414 items. I put them all back, and
don't have shift h again in Entourage, but using the "half-and-half" method
of replacement should narrow it down in a few hours. Now, to find those few
hours. ;-)

I *will* let you all know which Preference it is that is causing this little
headache. :)
