Yes, you are correct here.

nope, the AF happends with wide open aperature. ie. if you have
28-80 f/2.8 lens, EOS3 and dialed aperature F/8, the body would
still use the central area's cross type sensors, because the
focusing happends wide open.

Focusing happends always with maximum (wide open) aperature.
