Meter off a brown or green area (TREE) then manually set the camera and
shoot.

The meter will not be dead on in the snow.  I speak from experience.
You need to open up at least 1-stop depending on the snow coverage and the
subject.
Personally, I would take multi-spot meter readings and then set it manually.
