Both are excellent systems. The Nikon F100 has a bit more solid feel than
the comparable EOS-3 (I own the latter). In favor of the EOS-3 is that it is
full-featured. Nikon always forgets to put all the features in their
cameras and usually offers an add on for extra $$$. The F100 does not have
a mirror lock up feature. You would need to buy the F5 if you needed that.
The N90s did not have bracketing. You need to buy some back to get that
feature. There is a greater lens selection within Canon's line and also a
larger secondary market if you want to find a used lens. Both have
good/fast AF Canon's is quieter. One of the main selling points is Image
Stabilization with the Canon lenses. This allow you to shoot at slower
shutter speeds to get more ambient light or greater depth-of-field. For your
applications Image Stabilization may help at times such as a wedding when
you want to shoot at 1/30 second at F8 handheld.
