Here is one more version:

Have the "umbrella flash" in M-mode and the fill flash
in E-TTL mode (e.g. -1.5 EV). This allows you to move the
camera without need to worry about the on-camera power setting.
Should work if the subject to main flash distance is
more or less constant. You need to take care where you point
the active AF point to keep the fill flash constant.

If the camera-to-subject distance remains the same then
also I would use M-mode in both flashes.
