I've got a friend heading back to the States for a few days and he's
offered to pick up a bracket for me - however, I'm not sure which one to
order.

What would you recommend to use with the EOS 3 with the PBE2?  Rotating
is necessary... Any suggestions?

Also as another possibility, I play with medium format and would like to
use the bracket for both (or is this asking too much?)

There are several choices in the Stroboframe line-up.  Check out
http://www.saundersphoto.com/html/strobo.htm to see which might suit your
needs.  I have two, the Pro-RL and the Pro-T.  The Pro-T is lighter, and
flips the flash arm over the camera for vertical compositions.  It's a good
lightweight carry along, but the Pro-RL, although heavier, offers much more
flexibility.  The height is adjustable with one hand, the flash can be
tilted up or down through a 90 degree range, and the camera rotates under
the flash versus flipping the flash bracket arm.  Plus, it has a kick stand
for setting the whole apparatus down and has a lot of distance between the
flash and the camera (and this distance is adjustable with one hand).  For a
wedding type shoot, I would think this would be perfect.  There are smaller
Stroboframes as well, and all Stroboframes can add a quick release mount
with quick plates (both additional expenses) for your camera to make
snapping them on and off your camera a twist free breeze.  I highly
recommend them.
