Debated between the f4 or the 2.8 IS.  IS 2.8 would be nice, but it's
big and very noticeable.  I've probably settled on the f4 given that
it's a little less obtrusive.  Just a shame it's not available in black
& lacks the rubber seal.  In any case, I will have the 2.8 24-70 if
needed for the indoors shots or rainy weather.

Instead of the 70-200 why not consider a Canon or Tamron 28-200mm or
Tamron 28-300mm.  Providing you do not need the F2.8 you will still get
plenty of range and quality at the mid-apertures. Also, you will have a
Lowe Pro off road, the appearance of which says I am a tourist with a
nice camera please rob me. I would suggest a less obvious camear bag.
Something less noticeable.  A friend uses an old diaper bag when
traveling, something that no one except an idiot would think of stealing
considering the typical contents.  Alternatively go to an Army/Navy
store and pick up a small ammo bag or similar. 
For theft deterrent be watchful and do not get caught in tight crowds
were things can disappear quickly.
