My kit for similar low-profile scenario:

Camera body
20-35 USM
28-135 IS USM
50 f/1.8

I forgo external flash and pray the 50/1.8 will suffice
when I shoot ISO 400 in low-light.

I carry it all in a Domke F-802 Satchel from which I
long ago cut off the contrasty bright red Domke logo
(to keep it even lower profile).  Mine is old enough
and worn enough so that it looks like nothing special. 
I normally use LowePro bags when security is not a
concern, but they look like they are designed to
protect expensive equipment, hence they look like they
*contain* expensive equipment.

I've found situational awareness more important than
low-profile appearance.  Equipment and bags cease being
low-profile as soon as you pull out the camera and lens!
