Of your list, I guess I'd take the 24-70 too, but it depends on where
you're going and what you're planning to shoot of course.

If I want to take just one lens and still be fully prepared, I take the EF
28-300L... the only drawback of it is that it's huge and heavy.

I'm considering Sigma's 18-200, but I don't know if it'll go on a 10D, nor
how good or bad it is. Does anyone have experience with this lens?
