Ercoupes are not known for running cool, regardless, if you can't achieve temps no more than 120* above ambient, something's amiss.
90% of the planes I've been involved with had "perfect" baffles according to the owner. 90% of the planes I've been involved with that had high temp issues had faulty baffling.
The shape of the lower lip of the cowl is important, too.
Continental had an oil cooler that goes where the oil filter is currently. These are very rare. There is no other approved oil cooler that I am aware of.
The "Super Nose Bowl" helps a lot, but presumes everything is in order first. Otherwise it is "lipstick on a bull dog."
There are a number of reasons an engine may run hot that are not airframe related, like compression/blowby, mag timing, low oil pressure, etc, all of which should be eliminated first.
The operation of the heat valve is normal. Otherwise the heat muff would overheat. the carb heat works the same way.
