I am having metalized wings and I really like them. 
I am in Germany now and would not know where to go to have the wings recovered. 
I do have access to a certified mechanic that can do any metal work. 
As for the weight penalty, the calculation is only true as long as the rag 
wings are not heavily coated. 
You must paint the fabric, but you can have the metal polished. This is how I 
see that.
 
I guess a non painted metal wing is not much heavier than a heavy coated rag 
wing.
 
The rag wing supposedly flies better. I can not attest that since I flew only 
metalized wings.
But I must say that a metalized wing does not fly bad either.
 
 
I think it is your call to find the right trade off that fits your situation.

I am considering recovering my wings next year. I am curious as to the groups 
opinion regarding fabric vs. metal wings. What are the advantages/disadvantages 
of each.I am interested in hearing all opinions, even if they are only "gut"
