I pondered that very same question for a long time, before installing a simple, 
inexpensive Westach CHT setup, with one meter and a switch that selects between 
the 4 cylinders.
I also purchased a similar (4 probes and one meter, with a switch to select the 
cylinder being monitored) Alcor EGT setup, which I have yet to install.
For me, having access to each individual cylinder is important, as a 
troubleshooting and diagnostic aid. Last year I spent 2 months troubleshooting 
a low RPM problem, eventually traced to a broken cam follower on the intake 
valve of cylinder 1. I did not have the CHT setup then, which would have 
quickly pointed to cyl 1 as the source, and saved me a lot of time wasted 
checking elsewhere (carburetor, etc.).
Downside: I found my Westach cylinder CHT selector switch to be sometimes 
intermittent, however it is not expensive to replace.

  I would like to have CHT and EGT gauges installed but find gauges
  from under $100 to over $1000, that monitor One cylinder or all
  Four cylinders.
