How about rent a 3-control LSA for a couple of hours of training & currency with rudder pedals plus an hour for the checkride. Voila! you are a Sport Pilot with no "restrictions" concerning rudder pedals. If required then an hour with an instructor in your 2- control Ercoupe for a sign-off to "add" the 'Coupe.
