While I don't remember the exact temp, it was in the normal operating range.

Check the accuracy of both the pressure
and temperature gauges.  If you really have 21 psi at cruise RPM, ground
the plane.  The limit is 30 psi.
 
The multi vis argument as presented doesn’t
hold water.  Multi-vis oils thin out less as they heat up, not more. 
However, they do start with thinner base stock.  If you are using (say)
20W-50 oil it will have the same viscosity at 212 degrees F as straight 100 wt.
 
The C75 should be grounded also…
 
21 psi is insufficient to adequately
lubricate the engine.

As I've flown my C-85 coupe more these hot days, I have
noted that when I first start the engine, oil pressure is in the 30-40 lb
range. Then after I am at cruise, it runs at about 21 lbs or in the middle of
the caution range. I asked my a&p and he thinks it probably has to do with
the multi-vis oil warming up and the ranges were set long before
multi-viscosity was available. He also has another customer with a C-75 coupe
that runs in the same range. So what oil pressure does your coupe sit at when
cruising?

btw, solved the brake problem where the pedal needed adjustment and was binding
a bit.
