The side panels have to come out at annual inspection, have your mechanic 
install the upholstery  at that time. 3M super weather strip adhesive available 
at any automotive parts store and probably Wallyworld works great. Comes in a 
big red  tube like toothpaste and either yellow or black.

 

Check for clearance around the edges, you may have to trim the original metal 
panels slightly if the new fabric needs to to wrap around.

 

Any auto upholstery shop could also do it and the seats. It is perfectly legal 
if under you as the "owners close supervision"

I can offer partial help. My coupe came with new Airtex side panels, but I had 
to remove them when putting in new window channels. Mine were simply contact 
cemented to the metal panel in spots. You can see that the seat bottom and back 
will hold the new material tight against the side at that point. I put some 
contact cement on the surface between the window and the panel as well as on 
the upholstery top. I then folded it over the bead and it stuck there.
I sure would not consider hiring someone to do it, seemed real easy to me. I 
think you can see some of my workings on Hartmuts site, check out window welts.
