How are you calling spamassassin?
if it's from /etc/procmailrc then a record of what was filtered when
should be in /var/log/procmaillog (if that's where procmail is logging to)

Spamassassin would be my first suspect; and you may want to see if
whitelisting mail within the domain gets rid of the problem.

Or change the weight on the scoring rule that's getting triggered.

Of course this only applies if it's mail within the office that's causing
this, if it's mail to the outside world that is exhibiting this behavior
then it's your MTA (probably).
