XFree86 on osx was pretty good for me for a while http://www.apple.com/macosx/features/x11/ (I think you either need the OSX DVD to do the install, or get an Apple Dev account and download from their dev site).
Also, if you just need some standard *nix stuff that's not in OS X, there's DarwinPorts (http://darwinports.opendarwin.org/) and Fink (http://fink.sourceforge.net/). The combination of all those got me through about five months of working with my G5 at work before I said eff it and now it dual boots with Ubuntu-PPC.
