as for word processing on OS Ten, "NeoOffice" is a port of OpenOffice that is "better", I think tuned for aqua or something.
Don't forget AbiWord, from http://abisource.com -- they have mac builds.

PPS - also, I've been using FreeMind, a "mind mapping" tool (think org charts, hierarchical diagrams & notes) http://freemind.sourceforge.net (uses Java, so is multi-platform)
