I have no real hands on experience, but know some links that might be useful

They use Perm 132 -motor, I would personally chose DC, I think it is the most 
bullet-proof solution to use a DC motor instead of AC drives, if you have 
thunderstorms, saltwater and so on. they have a "regen" function when sailing, 
så if you fold out the propeller it will charge, if speed is enough. (I guess 
it is enough to just give it a "punch" with the motor to fold out the prop, and 
then then use contactors to reconfigure to a low speed low voltage "parallell" 
connection of the batteries, then you charge up the system when sailing)

A cheap solution might be to find a scrapyard golfcart motor or similar? Not 
perfect and lower efficiency. But might be "free".  If the use will be longer 
range I would go for a high efficiency PM motor, try to target the combination 
to over 88-92% at cruise speed and get longer run,  possibly save some money on 
a smaller battery, lower amps and so on.

I am not sure if this unit in an USA company "kiwi prop" will provide charging 
when sailing as a normal folding propeller, I dont think so, but it was "cheap" 
and had an interesting design:
