How would you mount the car-side PowerPole connector? Pigtail somewhere? I
have a hole in the side of my car I'd like to use to mount it..

Anderson Power Products has a huge variety of housings that the individual Powerpoles snap into. The housings are used to build multi-pin connectors with various features including strain-reliefs, chassis mounting, waterproofing, etc.

There are so many options that it's probably best to call them, describe what you need, and they can direct you to the best choice.

Or, you can "roll your own". I used 4-pin Powerpole charging connectors for a fleet of Zap EVs for pizza delivery vehicles. Two pins were 72vdc for the pack, and two were 12vdc for the accessory battery (much like you described). The four Powerpoles were arranged in a 2x2 arrangement, and mounted to a right-angle aluminum plate. The plate was in turn attached to a normal outdoor outlet cover with a hinged door.

There was a contactor in the EV to connect the pack to the connector. With contactor off, the pins of the connector were dead. When you connected the charger, the 12v power pulled in this contactor to connect the pack. The current draw on the 12v line also caused the charger to turn on; so its end of the 72v was also dead until you plugged it in.

One final finesse. I put a magnet in the Powerpole connector on the charging cable. There was a reed switch in the receptacle in the car. When you plugged it in, the magnet closed the reed switch. This disabled the car to prevent it from being driven away while it was still plugged in.
