But we never understand how anything works by your measure. We understand more. First, we learned how to make concrete. Then we learned the chemistry of making and using cement and how it formed concrete. Then we learned the molecular dynamics of that chemistry. Recently we learned that sea water in place of fresh water makes concrete last much longer. But do we understand how those atoms do that? Maybe we will someday. But then someone will say, yes but you don't know how quantum field theory works...you just know how to use it.
