The thing that always gives me pause is that most of these "next to free" systems aren't redundant. I have all my servers with RAID, redundant power supplies, and on a UPS. Email is too critical to be left to a single spindle...
I've heard of some people using a CF card with OS/config. No moving parts = goodness.
