The debug log shows that it knows to forward email for that domain to new server then old server.
The activity log just shows it sending to old server. When I set up the forward I used the IP address of the new server. It is an internal address, I do not want this server to have any external interface. I did not add a ":25" on the end of the ip address as I assumed that it would automatically use that port :) When it sends to original server it sends to exch.mydomain.com, not the ip address.
