This is a real long shot because I have never used MailEnable but in the SMTP Virtual server in Windows you have to put an IP address in brackets (i.e [1.1.1.1]) if you want to use it instead of a hostname.

The activity log just shows it sending to old server. When I set up the forward I used the IP address of the new server. It is an internal address, I do not want this server to have any external interface.
