Excuse my fuzzy brain, but can the scope of the IMS be set to 'this
server'? If so, I believe that ought to cause the Exchange server to
route outbound mail for itself given your described environment.

I'd avoid putting any unnecessary bits into AD that you don't have to.
I'd recommend doing this all in VMWare, if you don't have a copy you can
download a 30 day trial. You could do all of this on 2 VMs total... 

1. Install 2 instances of W2K server.
2. DCPromo one of them.
3. Install Exchange 5.5 on the machine which isn't a GC
3a. Install the IMS
3b. SP 4
4. Install the ADC.
5. Install E2K3
6. Move/create a mailbox on the new server
7. Remove the IMS

This would also make a nice lab for testing and debugging in the future.

It really should work just fine and worst case scenario (well, things
can always get worse I suppose...) is that you remove the IMS and things
don't work as I suggested. In which case, you can reinstall the IMS on
the 5.5 box and configure it as it was previously.
