Andrey, Thank you. I can't test sending an email right now, but I certainly will first thing in the morning.
However, it was when attempting to access the mailbox with Outlook that I found the issue. I was adding the Exchange account into Outlook for that user, but was unable as there wasn't an account to be added :)..
