Outlook however will check DNS or a hosts file first for name resolution of
the Exchange Server and I think that is what Matt is getting at here.

Outlook uses RPC to connect to a Exchange server.  You might want to see if 
RPC ports are open.  OWA is going to use http (port 80) to connect and pop3 
is 110.  RPC is first going to make the initial connection via port 135 and 
then use ports randomly assigned by the exchange server.  If there is a
