I don't think she is taking the food up at night. I will have to ask. He has a lot of toys and is not showing much interest (something else that worries me). She is trying to play with him before bed to wear him out. It isn't helping. He's only eating canned food apparently. I sent them home with canned and dry felidae, but he's only eating the canned...

A bedtime snack could help too -- canned food, a little shredded chicken or canned tuna, some kind of treat to settle him for the night. Might be worth wearing him out a little earlier in the evening -- one of those trackball toys or a laser light, throw in some catnip. He needs a little adjustment time, and some spoiling to welcome him to his new home.
