To answer the question:

If you export an EPS file from Finale, you can import it directly into Pages using cmd-shift-V (the shortcut for placing graphic files), but Pages will internally convert the EPS to PDF format before placing it in the document.

I personally have no problem with this, but I suppose hardcore EPS users might. I personally have zero use for EPS -- ever since Finale 2004, I've used PDFs exclusively.
