To which I reply:
1. My Dad (he still uses dialup, like an awful lot of people who live in the 
rural US)
2. Many of the schools that I've worked with recently don't have the most 
reliable, speedy internet connections in the world. For example, place where I 
go to school/tutor/teach doesn't have a real great network.

Matthew, I suggest looking into some software for your website (I wish I could 
find the link at the moment--I think QuickTime will let you do this--I know 
that YouTube has their own proprietary stuff in this regard) that lets you 
control what quality gets streamed based on the requesting source. Barring 
that, posting links for 2 encodings is probably the best way to go.
