I'm not 100% clear on the meaning here, but X11 (Apple's, XFree86, X.org) on OSX is set up to run alongside the OS X window server. There are 3 options:
1) Run X11 in rootless mode--the X11 windows and the OS X windows appear on the same desktop--you select which you want as usual. Note that if you are using an X11 desktop environment with a background, you won't be able to see the OS X Desktop and the windows will be behind X11--you can still switch with Command-Tab as normal.
2) Run X11 in full screen mode. X11 pops up on a separate virtual window, and you can switch between X11 and Aqua via a keystroke from X11 and the Dock icon in Aqua, respectively.
3) A hybrid: Run rootless X11, and then run Xnest, which creates a rooted window within X11 on which you can run a full desktop that's contained within the window.

You certainly can do such a thing via Fink: installing the 'bundle-gnome' and 'bundle-kde' or 'bundle-kde-ssl' packages will install everything you need to run GNOME or KDE, respectively.
